Raw Nut Milk

There are a dozen ways to make raw nut milk depending on the nuts and the tools you have.

Since I use the Vita-Mix for almost everything I make, I'll give the directions for that first using almonds.

Step 1: The evening before you want to make the nut milk, put 1 cup of organic raw almonds in a bowl with enough mineralized, distilled water to cover the almonds by about an inch.

Change the water and rinse the almonds every 6-10 hours.

Step 2: Put the almonds in the Vita-Mix.

Step 3: Add 4 cups of distilled water.

Step 4: Start on variable speed 0 and quickly go to 10 and then flip from variable speed to high. Blend at high speed 30-60 seconds.

Step 5: Get a large bowl and place a nut bag in it. It's easiest with two people so one can hold the bag while the other pours the milk into it. You can then 'milk' the liquid out of the bag and into the bowl.

Save the pulp to use in other recipes such as breads, cookies and brownies.

Step 3B is optional: Many prefer to add a touch of vanilla extract and agave sweetener before blending. Another sweetener that is good in almond milk is dates. Soak a few dates in one of the cups of water for 20-30 minutes and then put it all in the blender.

Using Other Tools

If you are using a juicer or grinder, you can start with that, add the ground nuts or nut butter to your blender with the 4 cups of water. Mix until smooth and then pour through the nut bag.
